Yesterday I think I ate 4 or 5 tacos. I felt satisfied but not overly full all day. I was doing a lot of research, using that brain power, and so I think I got hungry more often than usual (I also have a terrible tendency to overeat). By mid-afternoon I was sort of tired of corn tortillas. So I guess the plan will be to do some sort of taco or tortilla-less taco bowl every two hours. The portion is probably the most important thing.
In addition to observing how my energy, satiety, and immune system improve during this taco trial, I want to see if it affects my weight at all. Right now I'm at 162lbs, my highest weight ever. Ideally I'd like to be around 145-150, since I'm tall, and I don't really want to be skin and bones. So I'm going to be exercising more, and watching if I can sustain a workout on a taco diet with no protein supplements.
I'm still going to have a fruit smoothie/shake every morning.
Should be interesting.

Nachos and Tacos for Health!
I've decided to try a rather odd diet...tacos only. Instead of eating two or three large meals a day, I'm gonna try eating just one taco every few hours. Breakfast tacos, lunch tacos, dinner tacos, and dessert tacos! Tacos for every occasion.
For a while I've been considering making a nachos blog, because I have so many AWESOME nacho recipes appropriate for many dietary considerations and restrictions. All of them are healthy (or are somehwhere in the good range on the healthy food spectrum). And since I just decided yesterday to do this strange taco diet, I decided now would be a good time and place to document both - my nacho recipes and how the taco diet works out for me.
I sometimes fight consistency. As in, doing things for a long period of time. I don't know why, it's just part of me. I'm learning to deal with it, and fight the urges to procrastinate, and remember to say, WRITE on my 6 or so blogs. Ok so on to my philosophy of the taco diet.
Yesterday I was thinking back to the times in my life when I've felt like the healthiest me, and what I was doing, eating and thinking during those times. I realized that I feel the best when I eat lots of veggies, meat, and beans. The only grains my body really doesn't get fussy over are oats and corn. When I spent a few months living in Portland, Oregon recently, I ate tacos all the time. Or nachos. I was cooking lots of organic beans, veggies, and turkey burger. I felt awesome. I had energy and strength to run. I didn't over indulge on sweets or other naughty foods in the not so good range of the healthy food spectrum. And I ate in a balanced way.
When I make tacos or nachos, they generally consist of sprouted organic corn tortillas, pintos, lettuce or cabbage, organic plain yogurt, salsa or tomatoes, and avocados. Sometimes I'll do cheese, but for the taco diet I plan to keep cheese and sour cream out of the picture. I might use some veganaise on occasion (mixed with chili powder and red hot it's so yummy on tacos/nachos).
The possibilities are limitless. I'm gonna tell you all about it. And see if this is something I can recommend to my clients who are picky eaters, hate preparing food, or have multiple food allergies.
